Sesame, Lard and a Hot Wall: Changzhou’s Great Sesame Cake

麻糕出炉满巷香,一层酥脆一层黄 Mágāo chūlú mǎn xiàng xiāng, yī céng sūcuì yī céng huáng – Fresh from the oven the cake scents the lane; one layer snaps, one layer glows gold

正文:常州大麻糕 Chángzhōu Dàmágāo the Changzhou magao is the city’s great breakfast pastry – an oval cake of layered dough, brushed thick with sesame, and baked against the wall of a clay oven until the crust blisters. Big brother to the little xiaomagao, it runs sweet or savoury: lard-and-sugar filling that melts to syrup, or lard-and-scallion that perfumes the whole street. The recipe is over a century old and the oven walls have not changed.

The bake is the show. Bakers slap dough rounds onto the oven’s inner wall with a bare flick of the wrist; minutes later the cakes come off blistered and mahogany, stacked in dozens on the counter board. Buy one at the door and eat it standing: the crust shatters, the hot lard centre runs, and the sesame doubles the aroma.

Texture is the whole argument – a dozen layers of crisp over a soft, steaming middle. The sweet version caramelises at the edges; the scallion version perfumes rather than sweetens. Old shops in the city’s traditional quarters still bake in continuous rotation through the morning, and the queue length is the freshness gauge.

Magao travels well for an hour or two, which made it the canal-era journey cake – wrapped in paper, packed along the Grand Canal. In Changzhou it pairs with a bowl of silver-thread noodles: one crisp, one soft, the town’s breakfast double bill.

The same district holds more flavors worth chasing: 天目湖砂锅鱼头 Tiānmù Hú Shāguō Yútóu the lake fish head casserole, 银丝面 Yínsī Miàn the silver-thread noodles, 加蟹小笼包 Jiā Xiè Xiǎolóngbāo the crab dumplings, or 常州萝卜干 Chángzhōu Luóbogān the pickled radish – four more doors into the same 常州市 Chángzhōu Shì Changzhou City table.

Where to find it: Magao bakeries cluster in Changzhou’s old quarters and morning markets – cakes cost pocket change, sell hot through the morning, and the sweet lard and scallion versions share every oven; eat the first one at the door. All checked November 2026.
