Yáng yù yī guō, dēng huǒ yī biān; wài sū lǐ nèn, yě wèi yī shēng. — One pot of highland potatoes, one pan over the fire; crisp outside, tender within — a wild taste for a lifetime.
Potato patties (洋芋粑粑, Yángyù Bābā) are the county’s street snack: highland potatoes — the Daba slopes’ dense, small, high-altitude crop — boiled, mashed with a little starch and seasoning, then pan-fried into patties crisp at the edge and soft at the middle. In a county whose cuisine runs to smoke and fire, the patty is the everyday register: the breakfast, the school-run hunger answer, the thing bought by the piece from a griddle at the market edge.

Highland potatoes are a different crop from basin potatoes. Grown cold and slow at altitude, they are smaller, denser and waxier, with a density that survives mashing without turning to paste and takes a hard sear without collapsing. The county cooks them two ways in the same breath: smashed into these patties, or boiled whole in their skins and eaten with a dip — the boiled version being the farmers’ own lunch, the patty the street’s.

The correct purchase is by the piece, hot, from the griddle, with the county’s chilli-oil-and-vinegar dip rather than ketchup — the patty is bland on purpose so the dip does the work. Market mornings are the best trade, when the griddles run beside the potato stalls and the patties are made from the morning’s crop.Households make the same patty at home with the cured pork fat as the frying medium, which is the version to ask for if you are lucky enough to be invited.

flowcloud would say that a county famous for its smoke keeps its daily bread in a potato — and that the best fried thing in Chengkou costs less than a bus ride.
