Erkuai: The Rice Cake Dali Grills for Breakfast

晨雾起,饵块香。Chénwù qǐ, ěrkuài xiāng – Morning mist rises; the erkuai is fragrant.

饵块 Ěrkuài is Dali’s breakfast muscle – good rice steamed and then 舂 chōng pounded into a dense cake, cut into rounds, grilled over charcoal until it puffs, spread with sauce and wrapped around a 油条 yóutiáo fried dough stick. A basic wrap runs about 5-10 yuan, sold from before dawn until the stalls sell out, and the honest shape is that the cake is plain by design: the chew is the craft and the sauce is the choice. The wrap is the working breakfast – one hand, no plate, no waiting. The word 饵 ěr is the old Chinese term for a rice cake, and the family is old – the 饵块 Ěrkuài is the slab, the 饵丝 Ěrsī the shredded noodle, and 巍山 Wēishān Weishan south of Dali is the town whose 饵丝 Ěrsī bowl is famous across the plain.

The mechanism is the pounding. Steamed rice worked into a mass develops the chew that distinguishes 饵块 Ěrkuài from 年糕 niángāo – the latter is glutinous and sweet-leaning, the former is plain rice, dense and savoury. On the grill the cake blisters and puffs into a pillow, and the sauce is the variable: 甜面酱 tiánmiànjiàng sweet paste, 辣酱 làjiàng chili, 卤腐 lǔfǔ fermented tofu, sometimes 花椒 huājiāo Sichuan pepper. A good cake is dense enough to chew and plain enough to show the rice – the pound is the whole recipe. The stir-fried cousin is 大救驾 Dà Jiùjià “the great rescue” – the dish named, legend says, for the meal that saved a fleeing Ming emperor’s hunger in 腾冲 Téngchòng (a legend, not a record) – and the honest distinction is that 烧饵块 shāo ěrkuài is the fast street version and 炒饵块 chǎo ěrkuài is the plate.

Locals eat it walking. The morning stalls set up at the old town’s north gate and along 复兴路 Fùxīng Lù; the order is sauce first, then the dough stick, then the roll, and the cake should be eaten within a minute or it turns into a chew you have to work at. A coal grill, a basket of cakes, two sauce pots and a basket of dough sticks is the whole business – a stall that cannot puff the cake is not worth the queue. The same stall usually sells 豆浆 dòujiāng soy milk, and the two together are the local definition of a complete breakfast. A 饵块 Ěrkuài wrap with a soy milk is the local breakfast price benchmark – check the current price at the stall, since the morning stalls post no menus – and if you want the plate version, order 炒饵块 chǎo ěrkuài at a Bai restaurant and expect 韭菜 jiǔcài chives, ham and chili rather than the wrap’s sweetness.

Where to find it: morning stalls at the old town’s north gate and along 复兴路 Fùxīng Lù; the 饵丝 Ěrsī bowl version is a 巍山 Wēishān specialty – ask for 扒肉饵丝 Pāròu Ěrsī at noodle shops. All checked October 2026.

What the Locals Know

The local knowledge about the cake is about the puff and the minute, and it is the same check a Dali regular makes at any morning stall. The cake should blister and puff into a pillow on the 炭火 tànhuǒ – a stall that cannot puff the cake is not worth the queue, because the pound is the whole recipe and the chew is the craft. The second check is the clock: the order is sauce first, then the 油条 yóutiáo, then the roll, and the wrap should be eaten within a minute or it turns into a chew you have to work at. The third is the cake itself, which is dense enough to chew and plain enough to show the rice – the honest shape is that the cake is plain by design and the sauce is the choice, which is why the wrap and a 豆浆 dòujiāng are the local definition of a complete breakfast.

flowcloud would say that erkuai is breakfast made of muscle – rice steamed, pounded, grilled until it puffs, rolled around a dough stick – and that the honest move is to eat it at seven in the morning off a coal grill, because the cake is plain and the sauce is the choice.
