Cured Knuckle Soup Pot, the Set for Two at Eighty-Eight

Làtí yī guō, gāoshān sǔn yī pèi; shuāngrén yī tào, bāshíbā yuán. — One pot of cured knuckles, one partner of highland bamboo shoots; a set for two, eighty-eight yuan.

The cured knuckle soup pot (腊猪蹄汤锅, Làzhūtí Tāngguō) is the county’s communal dish: cured pork knuckles from the mountain smokehouses stewed into a soup pot, sold as a set for two at about 88 yuan, and served with the county’s highland bamboo shoots (高山笋) as the correct partner. It is the mountain register of the county’s table — the smokehouse’s winter output cooked as a shared pot, which is the form most of the gorge country’s farmhouse cooking actually takes.

The knuckle is the cut with the most collagen and the most patience required: hours of stewing convert it from tough to tender and turn the broth silky. The curing adds smoke and salt, and the highland bamboo shoots add the mountain’s other half — a slight bitterness and a fibrous crunch that cut the knuckle’s richness. The set-for-two pricing tells you the dish’s social form: it is ordered for a table, not a person.

The pot is a long cook — order it with lead time and let it anchor the meal. The correct sequence is the knuckles first, then the shoots, then vegetables into the broth, and the soup last. The 88-yuan set is the county’s benchmark pricing; the same pot at the farmhouse level comes from the household’s own rafters.

flowcloud would say that the county’s smokehouse runs a winter output and the soup pot runs it all year — and that eighty-eight yuan buys the whole mountain on a table.

Where to find it: Shicheng Hot Pot by the Kuizhou police station in the Feiyang Century City complex (飞洋世纪城) and the Sanxia Cured Knuckle shops along the Baidi Tianxia commercial street (环彬白帝天下商业街) both run the pot by the jin; the 88-yuan set for two, ordered with lead time, is the standard order, and the farmhouse version still comes off the household’s own rafters.
