Snow in Strips: Funing’s White Rice Cake
白如雪薄如纸,一片大糕甜到家 Bái rú xuě báo rú zhǐ, yī piàn dàgāo tián dào jiā – White as snow, thin as paper; one slice of rice cake carries sweetness all the way home
正文:阜宁大糕 Fùníng Dàgāo Funing rice cake is the county’s white flagship – long strips of steamed glutinous-rice cake, paper-thin slices folded in wax paper, so light they melt on the tongue before you have finished chewing. The cake has been baked in Funing for centuries under the name yudai gao, the jade-belt cake, and its recipe is a study in restraint: glutinous rice steamed, powdered and pressed with sugar and a web of seeds and fruit peel, then cut into strips that slice into slices thinner than a coin. Funing families buy it by the box for the New Year – the word gao puns on “rising”, and no county pantry opens the first morning of the year without it.

The classic strip is white and seamless – a block of pressed rice powder, dusted with flour, that the knife divides into slices you can read a newspaper through. Within the white, the cut face shows its confetti: red-green shreds of tangerine peel, black sesame, walnut crumbs, a frost of sugar that lifts off the blade.
The making is seasonal craft. Rice is washed, aged, steamed and dried in the cold months, ground and sifted fine, then pressed with syrup into moulds and steamed again; the slice must stay whole in the hand and vanish in the mouth, which is why the best workshops still cut by wire rather than blade. Boxes are sealed tight against the damp – the cake drinks humidity and loses its snap.

Eating it is calendar-shaped. New Year boxes dominate, wedding sets follow, and through the year the cake appears as a tea companion – one or two slices with green tea, the sweetness dry rather than sticky. Travellers carry it home by the carton: vacuum-packed strips now travel the country, though locals will tell you the fresh-cut box from a Funing counter is a different weather.
The same district holds more flavors worth chasing: 东台鱼汤面 Dōngtái Yú Tāngmiàn the fish-soup noodles, 建湖藕粉圆子 Jiànhú Ǒufěn Yuánzi the lotus-root starch balls, 奇园蟹黄包 Qíyuán Xièhuángbāo the Qiyuan crab-roe buns, or 伍佑糖麻花 Wǔyòu Táng Máhuā the sugar twists – four more doors into the same 盐城市 Yánchéng Shì Yancheng City table.
