The Clear-Water Crab of the Western Lake: Hongze Lake Hairy Crab, Sihong

青壳赤爪湖中秋,一斗蟹黄天下鲜 Qīngké chì zhǎo hú zhōng qiū, yī dòu xièhuáng tiānxià xiān – Green shell, red claws: autumn in the lake; one ladle of crab roe out-freshens the world

正文:洪泽湖大闸蟹 Hóngzé Hú Dàzhá Xiè the Hongze Lake hairy crab is the autumn that 泗洪县 Sìhóng Xiàn Sihong County waits for all year – mitten crabs raised in the lake’s clear western waters, steamed whole and cracked open at the table when the roe runs orange and the meat turns sweet. The lake is one of China’s great crab waters, its sandy-and-rocky bottom and flowing water giving a crab the trade rates as premium: tighter meat, cleaner taste, roe that oils the fingers at the ninth lunar month. The season runs from the autumn equinox deep into winter, the county’s markets open before dawn, and the steamer baskets stack in every restaurant window – the simplest cooking, because the crab needs nothing but time and vinegar.

The steamed whole crab is the canonical form. Tied raw, steamed over ginger until the shells turn persimmon-red, the crabs arrive in baskets – untied at the table, cracked joint by joint, the roe taken first while it runs. The ritual is slow by design: a crab is twenty minutes of work and the excuse for a long meal.

The market mornings are the county’s theatre. At dawn the crab pens land their catch, the buyers grade by weight and shell, and the street stalls tie ropes and load boxes for the courier counters – Sihong’s crabs travel the country overnight, but the locals take theirs home live and steam them the same hour. The county even runs a crab festival at season’s opening; the whole lakeshore smells of ginger and vinegar.

Eating season is eating strategy: the ninth lunar month favours the females’ roe, the tenth the males’ paste, and the truly serious buy by the basket and steam at home. The county’s crab restaurants run set menus – steamer baskets, the lake’s fish and shrimp alongside, ginger tea to close – and the prices, in season, undercut the Yangtze cities’ name-brand crabs by half. Autumn in Sihong is a reservation.

The same city holds more flavors worth chasing: 车轮饼 Chēlún Bǐng the fried wheel pies, 黄狗猪头肉 Huánggǒu Zhūtóuròu the braised pork head, 水晶山楂糕 Shuǐjīng Shānzhā Gāo the crystal hawthorn jelly, or 乾隆贡酥 Qiánlóng Gòngsū the tribute crisps – four more doors into the same 宿迁市 Sùqiān Shì Suqian City table.
