Bingbao Mooncake

冰薄月饼 (Bīngbáo Yuèbǐng) from Línjiāng Town (临江镇) in Kāizhōu District, Chongqing, is a municipal-level intangible cultural heritage with over 400 years of history. These paper-thin sesame mooncakes — flour, rapeseed oil (菜油), rock sugar, candied fruit (蜜饯) and sesame — are crisp, fragrant and gently sweet, a celebrated Mid-Autumn (中秋) pastry of northeast Chongqing.

Unlike the dense, lotus-paste mooncakes found elsewhere, the bīngbáo is rolled paper-thin and baked so it shatters at the first bite. The dough leans on rapeseed oil rather than lard, which keeps each round light and faintly nutty, while the candied fruit and sesame give a clean sweetness that never cloys.

What makes it a 名点 — a famed local pastry — is the balance of textures: shatter-crisp outside, a tender chew within, and a fragrance that builds as the sesame warms. It is eaten year-round but reaches its peak at Mid-Autumn, when families in the northeast hills box them up to share and to send away.

What the Locals Know

Bīngbáo is a crisp, fragile thing, so buy it close to when you will eat it and keep it away from damp air or it softens within a day. It is sold in Línjiāng Town and across Kāizhōu around Mid-Autumn, often stacked in oil paper rather than sealed boxes — a sign you are getting the traditional, hand-rolled round. Where to find it: Look in Línjiāng Town (临江镇) and the older shops of Kāizhōu District, especially in the weeks around Mid-Autumn when the paper-wrapped stacks appear. All checked October 2026.
