开州大混蒸 (Kāizhōu Dà Hùnzhēng) is the hometown dish Marshal Liú Bóchéng (刘伯承) missed most, and the centrepiece that closes a Kāizhōu banquet. In half-metre bamboo steamers (蒸笼) it layers beef, pork ribs, tripe, lamb and sweet potato (红薯), steamed until the meat juices melt into the vegetable broth below.
The steamer is the whole theatre. Each tier is packed with a different cut — beef and ribs on top, tripe and lamb beneath, sweet potato lining the bottom — so the fats and broths drip downward through the layers as they cook. By the time the lid lifts, everything shares one savoury, steam-softened unity.

Served as the 压轴 yāzhóu — the closing, headline dish — of a Kāizhōu feast, the hunt is generous by design: a single tower feeds a table, and guests work from top to bottom, finishing with the sweet, broth-soaked potato. It is the dish that says homecoming more loudly than any speech.

What the Locals Know
The hunt is a banquet dish, not a casual order, so it appears at feasts and bigger gatherings rather than at a quick weekday table — ask ahead if you want it at a restaurant. Judge it by the bottom tier: the sweet potato should be saturated with meat broth, proof the layers steamed long and true. All checked October 2026.
