开州椒麻牛肉 (Kāizhōu Jiāomá Niúròu) is a signature Kāizhōu souvenir built on an intangible-heritage air-dried (风干) beef craft. Yellow-cattle beef (黄牛肉) is cured, steamed, then flash-fried with Sichuan peppercorn (花椒) and chilli until the edges turn crisp — numbing, fragrant and chewy.

The 椒麻 jiāomá — “pepper-ma” — profile is the point: not merely hot, but numbingly aromatic, the peppercorn’s citrus tingle leading the chilli rather than trailing it. Air-drying first concentrates the beef so that the final flash-fry crisps the outside while the inside stays dense and give.

Packed as a 伴手礼 bànshǒulǐ — a gift to take home — it travels well and needs no reheating, which is exactly why it has become Kāizhōu’s default edible souvenir. A bag of it is the thing visitors carry out of the district, and the thing locals hand over as proof of where they are from.

What the Locals Know
This is a take-home food first, a snack second, so look for it at souvenir counters and specialty shops rather than at a dinner table. The good stuff has crisp, dry edges and a real peppercorn tingle — if it is merely salty-hot, it is missing the 麻 má that gives the dish its name. All checked October 2026.
flowcloud would say that Kaizhou pepper-ma beef is the numb-fragrant proof of the place, sealed in a bag and carried home. All checked October 2026.
Where to find it: Pick it up at Kāizhōu souvenir shops and specialty beef counters, where it is packed as a sealed bànshǒulǐ gift to take away. All checked October 2026.
