The Winter Medal: Smoked Horse Sausage on the Ili Table in Xinjiang
熏肠一节挂冬窗,切玉盘中泛油光 Xūncháng yī jié guà dōngchuāng, qiē yù pán zhōng fàn yóuguāng – A section of smoked sausage hangs at the winter window; sliced like jade, it gleams with oil on the plate.
熏马肠 xūnmǎcháng smoked horse sausage is Ili’s winter currency – horse intestines packed with meat, fat and cracked garlic, smoked over poplar or fruitwood for days until the casing turns amber and the inside keeps a rose-red that slicing reveals like a hidden picture (worth confirming the details for authenticity, since good sausage is made after the first hard frost and the summer market runs on frozen stock). The Kazakh households of the Ili valley hang whole racks of it from November; by Spring Festival the best batch is a gift of rank, carried between families like a medal. The taste is dense and smoky, fattier than any beef sausage, with the garlic arriving late and the smoke staying longest.

The way to eat it is as two courses. Cold, sliced thin, it opens the table with tea – the fat sets, the smoke sharpens, and a single round feeds a whole conversation. Hot, laid over naren noodles, it surrenders its fat to the broth and becomes the main course’s crown. The stock answer in kind: buy a section from a market stall that smokes its own, ask for the fat-to-lean ratio you want, and let the vendor cut a taste slice before you commit.

The honest star is the casing – chewy, faintly sweet from the smoke, and the reason industrial versions disappoint. The markets of Yining judge a year’s sausage by its casing first, meat second.
Nearly every other plate on this Ili list trades a different mood on the same table: 马肉纳仁 mǎròu nàrén horse-meat naren for the noodle version, 伊宁手工冰淇淋 Yīníng shǒugōng bīngqílín the handmade ice cream for dessert, 卡瓦斯 kǎwǎsī kvass for the thirst, or 包尔萨克 bāo’ěrsàkè baorsak for the morning plate – four more doors into the same 伊犁哈萨克自治州 Yīlí Hāsàkè Zìzhìzhōu Ili Kazakh Autonomous Prefecture. Once the plates are planned, our Ili travel map fills the day.

What the Locals Know

flowcloud would say smoked sausage is the prefecture’s winter letterbox: something left hanging in the cold, opened months later to find the valley’s whole autumn inside. All checked November 2026.
Where to find it: Winter markets in Yining city – the stalls where whole sausages hang from racks and the vendor smokes on site – sell by the section with a taste slice first; grassland homestays serve their own batch over naren, and the smoke you smell from the road is the shortest advertisement. All checked November 2026.
