The Puffed Golden Ball: Wuxi’s Stuffed Gluten Classic

面筋炸出金球壳,塞进肉馅煮一锅 Miànjīn zhà chū jīn qiú ké, sāi jìn ròu xiàn zhǔ yī guō – Gluten fried into a golden ball; stuff in the pork filling and simmer the pot

正文:油面筋 Yóu Miànjīn fried gluten balls are Wuxi’s most distinctive pantry staple – spheres of wheat gluten puffed hollow in hot oil, golden and feather-light, ready to be stuffed with seasoned pork and simmered into one of the city’s true comfort dishes. Wuxi’s water and wheat made it a gluten town for centuries; the balls were born as a way to keep the fresh gluten, and outlived every other preservation trick to become a signature.

The classic is 塞肉 sāiròu – stuffed. A hole is pinched in the ball, the gluten turned inside out, a marble of pork-and-chive filling pressed in, and the whole thing sealed and braised in a light soy-sugar broth until the gluten drinks the sauce and the filling sets juicy. Served three or four to a bowl over greens, they arrive soft, slippery and bursting – the ball’s crisp identity long since surrendered to the sauce.

The plain puffed ball leads a second life in soups and vegetarian dishes. Simmered with mushrooms and greens it takes on a chewy-tender give; split and fried again it tops noodle bowls. Wuxi cooks prize the balls’ capacity to soak – the gluten is a sponge for anything the pot offers, which is why a proper broth matters more than the stuffing.

Find them at home-style restaurants and market stalls across the city – the stuffed version simmers to order at the small eateries around the Nanchan quarter and the old canal lanes, and market counters sell the raw puffed balls by the bag for home kitchens. A plate costs almost nothing; order them alongside the ribs and the sweet-savory picture completes itself.

The same district holds more flavors worth chasing: 无锡小笼包 Wúxī Xiǎolóngbāo the soup dumplings, 无锡酱排骨 Wúxī Jiàng Páigǔ the lacquered ribs, 太湖三白 Tàihú Sānbái the three lake whites, or 惠山油酥 Huìshān Yōusū the Huishan pastries – four more doors into the same 无锡市 Wúxī Shì Wuxi City table.
