Yushan Chicken-Bean Curd, the Dish That Hides Its Chicken

Chī jī bú jiàn jī, chī dòu bú jiàn dòu; Yùshān yī wǎn, Péngshuǐ yī pái. — Eat the chicken without seeing chicken, eat the bean without seeing bean; one bowl at Yushan, the county’s number-one plate.

Yushan chicken-bean curd (郁山鸡豆花, Yùshān Jī Dòuhuā) is the county’s signature and its riddle: the local boast is “eat the chicken without seeing chicken, eat the bean without seeing bean” (吃鸡不见鸡、吃豆不见豆) — a dish whose chicken has been whipped into a white, bean-curd-like cloud, so the protein announces itself only in the eating. Yushan Town (郁山镇), the old salt town upstream, is the dish’s home, and the bowl is the county’s table at its most refined.

鸡豆花 is a technique dish: chicken breast worked into a fine, silky curd that mimics 豆花’s texture — the point is the transformation, a meat made to look and feel like the humble bean product it is served beside. The old salt town’s kitchens had the reason: a place with money from salt and a tradition of showing off technique, where the highest compliment is to make the expensive ingredient look plain.

The bowl is the order and the broth is the test — a good 鸡豆花 is judged on silkiness, not flavour fireworks. It is a banquet dish that also exists as an everyday bowl in the old town’s kitchens.

flowcloud would say that the county’s number-one dish is a disappearing act — and that the old salt town’s boast was always to make the expensive thing look plain.
