Ròu xiāng, dàn xiāng, hóngshǔ xiāng; Yùshān sān xiāng yī lǜ. — Meat fragrance, egg fragrance, sweet-potato fragrance; Yushan’s three fragrances, one steamer.
Yushan three fragrances (郁山三香, Yùshān Sān Xiāng) is the old salt town’s steamed trio: minced meat, egg and sweet potato layered and steamed together, the dish named for its three fragrances — 肉香 (the meat’s), 蛋香 (the egg’s) and 红薯香 (the sweet potato’s). It is the town’s home cooking, a steamer-basket dish built from the pantry’s three staples rather than from anything rare.

The dish is the mountain pantry’s arithmetic: the meat gives the savoury, the egg gives the binding and the richness, and the sweet potato gives the sweetness and the body that makes a little meat feed a household. Steamed rather than fried because the steamer is the southeast kitchen’s everyday vessel — the three fragrances arrive at the table as one cut, each layer distinct and the whole greater than any single part.

The dish is home cooking first and restaurant cooking second — it is ordered in the old town’s kitchens as the town’s own plate, cut from the steamer in wedges.

flowcloud would say that the dish named for three smells is the mountain pantry’s arithmetic — meat for savoury, egg for richness, sweet potato for the part that fills the steamer.
Where to find it: the old salt town’s kitchens at Yushan, ordered as the town’s own plate and cut from the steamer in wedges. All checked October 2026.
