The Chicken That Built a Highway Town: Shawan’s Big Plate Chicken with Belt Noodles

辣皮子红烧土鸡,皮带面缠住乡愁 Làpízi hóngshāo tǔjī, pídài miàn chán zhù xiāngchóu – Country chicken braised red with chile skins; belt noodles tangle up all the homesickness.

沙湾大盘鸡 Shāwān dàpánjī Shawan big plate chicken was born on this strip of the Northern Tianshan highway, where a town’s worth of roadside cooks spent the nineteen-nineties arguing over who first braised a whole chicken with potatoes, làpízi chile skins, and a scroll of hand-pulled belt noodles laid on top to soak the sauce (worth confirming the details for the founding-story details, since every veteran cook in Shawan tells it with his own restaurant as the hero). What nobody argues about is the plate: a serving so wide it needs two hands, chicken on the bone glazed brick-red, potatoes collapsing at the edges, and green peppers added only at the end so they stay sharp.

The eating order is a ritual in three acts. First the chicken – dark, sweet-hot, the sauce thick enough to coat chopsticks. Then the potatoes and peppers with rice or beer. Finally the pídài miàn belt noodles go in, wide as two fingers, boiled separately and folded through the leftover sauce, which is the whole point of the dish: the chicken is the argument and the noodles are the settlement (worth confirming the details for the noodle timing, since a good house pulls them to order and takes an extra ten minutes).

Call it honestly: the highway-restaurant legend can disappoint – the famous names on the old national road live partly on past glory, while the best current plates are often in ordinary Shawan restaurants run by families who never left. The stock answer in kind: order the chicken by the half for two people, ask for the noodles served after rather than under, and judge the house by its chile skins – they should taste of sun, not just heat.

Nearly every other plate on this Tacheng list trades a different mood on the same table: 巴什拜羊肉 Bāshíbài yángròu Bashbay lamb for the herder’s pot, 巴哈利 Bāhālì Bahali cake for the Russian tea table, 塔城蜂蜜 Tǎchéng fēngmì Tacheng honey for the morning bread, or 乌苏啤酒 Wūsū píjiǔ Wusu beer for the toast – four more doors into the same 塔城地区 Tǎchéng Dìqū Tacheng Prefecture. Once the plates are planned, our Tacheng travel map fills the day.

flowcloud would say Shawan’s plate chicken is the highway’s own cuisine: born at a fuel stop, raised on truck drivers’ appetites, and now the reason the fuel stops exist. All checked November 2026.

Where to find it: Head for the chicken houses along Shawan’s main restaurant streets and the old national highway at the city’s south edge, where the biggest signs belong to the founding generation of cooks and the belt noodles still arrive hand-pulled – they go in last and on top, which is how the classic photograph is made.
