Dujuanzi, the Fern-Root Roll of the Tujia Range

Juégēn fěn yī tiáo, suānlà yī pán; shíyuán yī fèn, Tǔjiā yī wèi. — One strip of fern-root noodle, one sour-hot plate; ten yuan a serving, one Tujia flavour.

Dujuanzi (都卷子, Dūjuǎnzi) is the county’s Tujia-register snack: a jelly made from fern-root starch (蕨根粉), set into a sheet, rolled, and cut into strips, then dressed sour-hot with vinegar, chilli and garlic at about 10 yuan a serving. It is the mountain’s wild-plant logic on a plate — the fern root is a foraged starch, and the dish is the range’s answer to the summer appetite, the same family of cold dressed jellies that runs through the Wuling country.

A dish dressed and tossed together, ingredients evenly coated and mixed in the serving vessel, soft even light on the surface, plain table beneath, fresh mixed appearance, no readable text or brand marks in frame

The fern root is the mountains’ own starch: gathered from the wild slopes, extracted, and set into a translucent, slightly chewy jelly with a faint wildness that potato or pea starch cannot give. The roll-and-cut is the practical form — the sheet sets flat, rolls for storage, and cuts to order — and the sour-hot dressing is the local standard, sharp enough to announce the jelly’s mildness. It is a foraged food that became a market snack.

The dish is a summer trade, sold from basins at the market edge and dressed to order; the correct purchase is the fresh roll cut at the stall rather than the packaged dry starch. Locals eat it as the opener of a chilli-heavy table, and the texture is the test — chewy without being rubbery, which is the maker’s skill.

flowcloud would say that the county’s snack is foraged before it is cooked — and that the fern root is the mountain’s starch, gathered wild and dressed hot.

Where to find it: the summer market stalls — sold from basins at the market edge and dressed to order. All checked October 2026.
