Watershield Fish, the 'Ginseng of the Waters' on the Table

Shuǐzhōng rénshēn, chúncài yī wǎn; jiāngyú yī tiáo, wǔshí yī rén. — The ginseng of the waters, one bowl of watershield; one river fish, fifty a head.

Watershield fish (莼菜鱼, Chúncài Yú) is the county’s elegant dish: a river fish cooked with watershield (莼菜), the aquatic plant whose glossy, slippery leaves have earned it the regional nickname “ginseng of the waters” (水中人参), at about 50 yuan per person. The dish is the quiet register of the county’s table — no smoke, no chilli dominance — where the fish’s freshness and the watershield’s texture carry the bowl.

Watershield Fish

Watershield is a texture before it is a flavour: the young leaves are coated in a natural gelatinous mucilage that gives the broth a silky body and the mouth a smoothness no other green can. The plant is also finicky — it grows only in clean, still, shallow water, which is why its beds are few and its reputation high. The fish’s role is to be fresh and plain: the classic cook is a clear broth where the watershield goes in last, so its texture survives.

The dish is a lunch and dinner trade at the county’s proper kitchens, and the watershield’s season is the register — out of season, the dish is not the same dish. The correct order is the pot for the table, and the broth is the point rather than the fish. Locals treat it as the county’s gentle answer to its chilli-heavy neighbours.

flowcloud would say that the county’s famous root is bitter and its famous plant is slippery — and that the fish is just the reason the two share a bowl.

Where to find it: a lunch and dinner trade at the county’s proper kitchens, in the watershield’s season. All checked October 2026.
