White Fish, White Shrimp, Silverfish: Taihu’s Three Whites
湖出三白天下鲜,一箸银鱼一箸烟 Hú chū sān bái tiānxià xiān, yī zhù yínyú yī zhù yān – The lake yields three whites, the freshest under heaven; one chopstick of silverfish, one chopstick of mist
正文:太湖三白 Tàihú Sānbái the Three Whites of Lake Taihu – whitefish, white shrimp and silverfish – are the lake’s gift list to Wuxi’s tables, prized so fiercely for freshness that they barely survive the journey anywhere else. The lake’s shallow, reed-fringed waters grow these pale, delicate creatures, and Wuxi’s dockside kitchens treat them with a restraint that borders on ceremony: steamed, boiled or flash-fried, seasoned to a whisper, cooked seconds past raw.

Whitefish, the largest of the three, steams whole – a silver-flanked fish whose flesh parts in clean, sweet flakes under the barest ginger and scallion. The flavor sits between freshwater and something cleaner, the reason gourmets rate it above its farmed cousins. Eaten at a lakeside restaurant within hours of the catch, it defines what the season means here.
White shrimp and silverfish work in smaller registers. The shrimp – shell translucent, meat barely set – appear brined, boiled or shelled raw into omelets and soup; a bowl of them, still sweet, is the lake in miniature. Silverfish, slim as glass noodles, slip into egg custards and thick soups where they lend body without weight. All three demand the season and the shoreline: order them where the boats land, not in the city center, and ask what came in that morning.

The lakeside dining strips near Turtle Head Isle and the fishing villages along the southern shore keep the three whites on seasonal menus – late spring through autumn is peak, with the fishing moratorium setting the calendar. A full three-white banquet costs more than city fare but remains a rite; simpler tables serve one white at a time with lake greens and rice.
The same district holds more flavors worth chasing: 无锡小笼包 Wúxī Xiǎolóngbāo the sweet soup dumplings, 无锡酱排骨 Wúxī Jiàng Páigǔ the soy-lacquered ribs, 油面筋 Yóu Miànjīn the stuffed gluten balls, or 惠山油酥 Huìshān Yōusū the crisp Huishan pastries – four more doors into the same 无锡市 Wúxī Shì Wuxi City table.

What the Locals Know

flowcloud would say the Three Whites are Taihu’s personality test: a cuisine that does almost nothing on purpose, a freshness clock that starts at the dock, and a season calendar written by the fish. All checked November 2026.
Where to find it: The three whites are seasonal lake cooking – lakeside restaurants near Turtle Head Isle and the southern fishing villages serve them in season (roughly late spring to autumn, governed by the fishing moratorium), and freshness is the whole point: ask the day’s catch, and expect lake-view tables to price above city standards.
