The Milky Cauldron: Tianmu Lake Fish Head Soup
一锅奶白映砂红,湖里鲢头火里融 Yī guō nǎibái yìng shāhóng, hú lǐ liántóu huǒ lǐ róng – A cauldron of milk-white against casserole red; the lake’s silver carp head melts in the fire
正文:天目湖砂锅鱼头 Tiānmù Hú Shāguō Yútóu Tianmu Lake fish head soup is Changzhou’s flagship dish – a whole bighead carp head from the Tianmu Lake reservoirs, simmered in a clay casserole until the broth turns opaque white without a drop of milk. The dish was codified in the 1970s around the lake’s hotel kitchens and travelled from there to banquet tables nationwide; in Changzhou it remains the sit-down ceremony of Jiangnan fish cookery, ordered whole and poured steaming at the table.

The casserole is the theatre. Lidded clay pots arrive rattling with steam; the lid lifts on a bowl-wide raft of white broth, the fish head split and floating gelatin-rich, scallion and cilantro strewn on top. The first ladle tastes of lake fish and nothing else – the point being purity, not seasoning.
The flesh rewards patience. Cheek meat comes off in soft flakes, the collar carries the gelatin, and the broth deepens as it sits, taking on a faint sweetness from long simmering. Sides run simple – soy-glazed greens, pickles, a plate of the local sesame cakes to crumble in – because the soup is the argument.

Fish head soup restaurants cluster around Tianmu Lake itself, an hour south of the city, and along the food streets of Changzhou proper. Book the lake-view tables on weekends; in town, the old brands serve the same casserole with less scenery and shorter waits.
The same district holds more flavors worth chasing: 常州大麻糕 Chángzhōu Dàmágāo the sesame cake, 银丝面 Yínsī Miàn the silver-thread noodles, 加蟹小笼包 Jiā Xiè Xiǎolóngbāo the crab soup dumplings, or 常州萝卜干 Chángzhōu Luóbogān the pickled radish – four more doors into the same 常州市 Chángzhōu Shì Changzhou City table.
