Highland Cured Pork and Highland Potatoes, the Wulong Winter Larder

Yǐn yán: Gāo shān là ròu, yān zhì yī dōng; shā guō tǔ dòu, kǎo chū shān zhī wèi. — Highland cured pork, smoked through one winter; a clay-pot of potatoes, roasting out the mountain’s flavour.

The Wulong highlands — the same plateau that makes Fairy Mountain a summer retreat — make the district’s winter larder. Highland cured pork (高山腊肉, Gāoshān Làròu) is pork preserved the mountain way: salted, air-dried, then smoked over a slow fire of pine and crop waste until the fat turns amber and the skin turns lacquer. It is the winter protein of every household on the plateau, sliced paper-thin and fried with its own fat before anything else touches the pan. Alongside it sits the plainer miracle of the same altitude: highland potatoes (高山土豆), small, dense, and waxy, grown on the cool slopes where the same tuber grows mealy and bland.

The cured pork is a winter trade: pigs are slaughtered after the first cold snap, and the smoking runs through the darkest months; by spring the rafters of plateau farmhouses are hung solid with it. The correct cook is the lazy one — slice it thin, fry it in its own fat, add dried chilli and garlic sprouts, and do not add salt. The highland potatoes want the opposite treatment: boil them whole in their skins and eat them with a dip, because their density is the whole argument.

Highland Cured Pork and Potatoes

flowcloud would say that the mountain larder runs on two things — smoke and altitude — and that a Wulong winter tastes like both.

Where to find it: a home-production and small-batch trade of the Wulong plateau — farmhouse rafters hang solid with cured pork by spring, alongside highland potatoes from the same cool slopes. All checked October 2026.
