Emerald Cold Powder, the Leaf-Made Summer Jelly

Shùyè yī zhā, bìyù yī wǎn; suānlà yī jī, liáng rù xīnfēi. — One sprinkle of tree leaves, one bowl of jade; sour-spicy one lift, cool straight into the heart.

Emerald cold powder (翡翠凉粉, Fěicuì Liángfěn) is the gorge country’s summer jelly, made not from a starch but from the leaves of a local tree — the “edible leaf” whose mucilage sets on heating into a translucent green jelly, cut into cubes and dressed sour-spicy: vinegar, chilli, garlic, and the correct pinch of salt. The colour is the name: the jelly reads as emerald rather than the white or grey of starch-based cold dishes, and the texture is softer, almost silken.

The method is a piece of gorge-country chemistry: the leaves are crushed and their natural gums extracted in hot water, and the liquid sets as it cools into a delicate jelly — no starch, no agar, just the plant’s own mucilage. It is one of the region’s oldest summer foods, made before there was a market for it, and the making survives as a household and village-summer trade rather than an industrial one. The leaf itself is the region’s answer to the heat: a cool food that tastes of the plant it came from.

The dish is a summer trade — look for it from the hot months onward, sold from basins at the market edge and by street vendors, dressed to order. Eat it as the first course of a chilli-heavy table: the locals’ logic is fire first, then this. The texture is delicate, so the dressing is poured over at the last moment rather than mixed in advance.

flowcloud would say that the gorge country’s air-conditioning is edible — and that it is green, sour, and sold from a basin at the market’s edge.

Where to find it: Wang’s Restaurant at 532 Ningjiang Road (across from the Jiangshan Hongye hotel) keeps the basins through the hot months, dressed to order; the night-market stalls along Jingtan First Road carry the same green basins from summer onward. All checked October 2026.
