Mutton in the Hottest Weeks: the Fuyang Ritual of Xuzhou
三伏天里喝羊汤,以热攻热汗自扬 Sānfú tiān lǐ hē yángtāng, yǐ rè gōng rè hàn zì xiáng – In the dog days, drink lamb broth; fight heat with heat and let the sweat settle it
正文:徐州伏羊 Xúzhōu Fúyáng the Xuzhou fuyang tradition is the counter-intuitive feast that made this city famous across the north: eating lamb at the hottest moment of the year. During sanfu – the three hottest decades of summer – Xuzhou fills its lamb houses, boiling pots of milky broth and platters of boiled mutton, on the theory that sweating now builds strength for winter. The festival calendar formalized what the city always did: fuyang season is when the whole town eats sheep on purpose.

The bowl itself is a study in clarity. Milk-white broth, boiled from bones for hours, carries slices of boiled lamb and offal under a snow of coriander and scallion; chili paste and pepper sit on the table for the bold. The meat is tender without surrender – Xuzhou lamb is raised inland and firm, and the soup tastes of animal in the honest, mineral way that south-of-the-river cooking rarely attempts.
The season is the theater. In fuyang weeks, lamb houses hang their banners, families book tables for the “fuyang feast,” and whole streets run out of mutton by noon. Locals treat it as physiotherapy – sweat out the damp of the year – and visitors are welcome to the logic: order the broth, the boiled lamb plate and a round of baked shaobing, and eat while the outside temperature argues.

Lamb houses across the city serve year-round, but fuyang season – roughly mid-July to mid-August – is the full ritual. The old lamb streets and the soup shops near the markets open at dawn and run past lunch; a bowl with meat costs little, and a full table with the boiled platter turns into the local idea of a celebration.
The same district holds more flavors worth chasing: 把子肉 Bǎzǐ Ròu the string-tied pork, 饣它汤 Shá Tāng the dawn broth, 地锅鸡 Dìguō Jī the iron-pot chicken, or 蜜三刀 Mìsāndāo the honey pastries – four more doors into the same 徐州市 Xúzhōu Shì Xuzhou City table.
