Sesame Discs of the Old Prefecture: Yanzhou Subing
炭炉壁上贴金黄,一口酥掉六百年 Tànlú bì shàng tiē jīnhuáng, yī kǒu sū diào liù bǎi nián – Golden discs slap onto the charcoal oven wall; one bite crumbles six hundred years
严州酥饼 Yánzhōu Sūbǐng the Yanzhou subing is the pastry that outlived its prefecture – a palm-sized disc of layered dough wrapped around 梅干菜 méigāncài preserved-dark greens and diced pork, glazed and sesame-crusted, then slapped inside a burning charcoal drum where it bakes against the wall until the crust shatters like lacquer. It was the portable bread of the old 严州 Yánzhōu Yanzhou river port at Meicheng – boatmen bought them in strings, exam candidates carried them up the trails, and the town’s ovens never stopped. The craft is in the laminate: oil dough folded into water dough, rolled into a spiral so the finished crust flakes in pages, and the filling’s salt-sweet argues with the sesame’s toast all the way down. Meicheng’s lanes bake them all day; the fragrance has its own gravity.

Split one open and the architecture shows: papery layers shelling off in rings, the dark filling steaming inside, sesame going everywhere. The correct eating is standing, over the paper bag, with a pot of tea waiting.

The wall-bake is the theater: masters slap raw discs against the drum’s glowing interior and pull them out with tongs in minutes, each disc char-freckled below and gold above. An oven this size turns out hundreds a day and still queues form on festival weekends.
In Meicheng the subing travels well – boxed strings of them leave town as gifts the way other towns send tea – and the ovens around the old streets bake variations: extra-green, extra-pork, extra-crisp. Buy from the drum, not the shelf; the difference is minutes and it tastes like hours.

flowcloud would say the Yanzhou subing is a prefecture’s memory baked edible: an oven wall for a griddle, greens-and-pork for a filling, and a crumble that flakes off in the same pages the exam candidates once turned. All checked November 2026.
Where to find it: Yanzhou subing bakes all day along the old streets of Meicheng ancient town in Jiande – charcoal-drum shops are the authentic pick, the preserved-greens-and-pork filling is canonical, a few yuan buys a warm paper bag, and morning batches sell fastest to locals who box them by the dozen.
